For this year’s Innovators Reserve category, they applied proprietary processing methods including cherry selection, fermentation, and drying protocols, which provide extra depth to the flavor notes of Gesha Village coffees. The Innovators Reserve pays a profound sensory experience that provides a tribute to the unique characteristics of the coffees. The innovation-winning lot is one of the best out of the 6 lots they offer. We love this lot because of the unique characteristics of the flavors. A malic acidity, hint of mint, nectarine, & honey suckled sweetness these characteristics contributed to the innovation process. The ANAEROBIC/NATURAL is the trend nowadays. This process of coffee is placed into hermetically sealed, stainless steel containers & removed all the oxygen. This process is diligently monitored by specialists, the high level of the sugars, temperature, pressure, pH, and time. This process will last 18 to 23 hours & this innovation can enhance the coffee flavor profile too complex characteristics.
